Ingredients

  • 8 oz shrimp, peeled and deveined
  • 1 cup cooked farro or quinoa
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup feta cheese, crumbled
  • For the Dressing:
    • 2 tbsp extra virgin olive oil
    • Juice of ½ lemon
    • ½ tsp sea salt
    • ¼ tsp oregano

Instructions:

  • Step 1
    Sauté shrimp in a pan over medium heat for 2–3 minutes per side until pink and opaque.
